Makes 1 Cocktail
1.5 oz White Rum
Juice of 1 Lime
5-6 mint leaves, roughly torn
2 oz Soda
2 T Simple Syrup (Bring equal parts sugar in the raw and water to a boil in small pan. Let cool. Can be kept, refrigerated up to 1 week.)
1/4 C Cubed Watermelon
Slice the lime into wedges. Squeeze juice from lime and add rinds to the bottom of the glass.
Add mint, watermelon, and sugar syrup.
Mash with a muddler or end of wooden spoon to release the oils from the mint and watermelon is liquidfied.
Add ice, rum, and soda.
Garnish with watermelon cubes and mint spring, if desired.
