S’more Cupcakes

Makes 24 mini cupcakes

2 C Graham Cracker Crumbs

1/3 C Sugar

1/3 C Mini Chocolate Chips

3 t Baking Powder

1/2 t Salt

3/4 C Milk

2 Eggs

24 Hershy Kisses, unwrapped

2 C Mini Marshmallows

Preheat oven to 350 degrees.

Line mini muffin tin with paper baking cups.

Combine graham cracker crumbs, sugar, chocolate chips, baking powder and salt in a medium bowl.

Whisk milk and egg in a small bowl.

Stir egg mixture into crumb mixture until well combined.

Spoon batter into muffin cups, filling 2/3 full.  (I like to scoop my muffins using mini ice cream scoops – available at all cooking supply stores).

Press one chocolate kiss in the middle of each cupcake.  Press 4 marshmallows around each kiss.

Bake 10-12 minutes until marshmallows are lightly browned.  Cool cupcakes in pans for 10 minutes, remove from pans and cool completely on wire racks.
