Santa Fe Pizza
1 pkg Pizza Dough (or 1 pre-baked pizza crust or homemade pizza dough)
2 C Mexican Cheese Blend, shredded
2 C Cooked Chicken, Shredded
1 C Corn, frozen or fresh
1 Avocado, peeled and sliced
Salsa (either homemade or store bought)
1 C Black Bean Spread
Fresh Cilantro, chopped for garnish
Black Bean Spread
1 15 oz can Black Beans, drained
3 T onion, chopped
1/2 Jalapeno pepper, seeded and chopped
1/2 Garlic Clove, minced
1/8 t Red Pepper Flakes
1/2 t Salt
1/4 t Pepper
3 T Fresh Cilantro
Combine all ingredients in the bowl of a food processor. Puree until smooth.
Pre-heat oven to 450 degrees.
Roll out dough if using raw dough. Transfer to a pizza paddle, dusted with corn meal. (If using a pre-baked crust, bake directly on oven rack for crispier crust)
Spread black bean paste onto dough, leaving an inch border.
Sprinkle cheese and arrange chicken and corn on top.
Bake in a 450 degree oven until cheese bubbles, and crust is deep golden brown.
Carefully remove pizza to a cutting board.
Add sliced avocado, salsa, and fresh cilantro.
