Makes 1 Cocktail
1.5 oz White Rum
Juice of 1 Lime
5-6 mint leaves, roughly torn
2 oz Soda
2 oz Passion Fruit Nectar or Juice (available in international sections of grocery stores)
2 T Simple Syrup (Bring equal parts sugar in the raw and water to a boil in small pan. Let cool. Can be kept, refrigerated up to 1 week.)
1 Fresh Passion Fruit (optional, but a great addition if you have access to them)
Slice the lime into wedges. Squeeze juice from lime and add rinds to the bottom of the glass.
Add mint and sugar syrup.
Mash with a muddler or end of wooden spoon to release the oils from the mint.
Add ice, rum, passion fruit juice and soda.
Garnish with lime slices and mint spring, if desired.
