Mojito Cupcake
Makes 24
For Cakes:
1 box Duncan Hines yellow cake mix
3/4 Dark Rum
1/4 C Fresh Lime Juice (~3 Limes)
1/4 C Water
Zest of 3 Limes
Combine all liquids and substitute for the water called for in the mix. Add Zest. Prepare and bake cupcakes as directed.
For Icing:
3 C of Your Favorite Buttercream
1 C Fresh Mint Leaves, tightly packed
1/4 C Dark Rum
Puree mint and rum until mint is finely chopped.
Mix into buttercream.
To Assemble Cupcakes:
Ice each cupcake with the Mint Buttercream.
Garnish with a lime wedge and mint leaf.
If you prepare the cupcakes in advance, garnish right before serving to prevent wilting of both the lime and mint.

These sound really refreshing. The Galms will be trying them at our next family picnic!!
