Classic Mojito

Makes 1 Cocktail
1.5 oz White Rum
Juice of 1 Lime
5-6 mint leaves, roughly torn
2 oz Soda
2 T Simple Syrup (Bring equal parts sugar in the raw and water to a boil in small pan. Let cool. Can be kept, refrigerated up to 1 week.)
Slice the lime into wedges. Squeeze juice from lime and add rinds to the bottom of the glass.
Add mint and sugar syrup.
Mash with a muddler or end of wooden spoon to release the oils from the mint.
Add ice, rum and soda.
Garnish with lime slices and mint spring, if desired.
