Chicken Pomodoro Paninis
2 C cooked chicken meat, shredded
1 C Fresh Basil Leaves, rough chop
2 Lg Balls Fresh Mozzarella, sliced 1/4 inch thick
2 C Tomato Sauce
8 Slices Crusty Bread
To Assemble Paninis:
Pre-heat Foreman grill or grill pan
Place 4 slices of bread on a cutting board.
Lay 2 slices of mozzarella on each slice.
On top of the cheese, arrange 1/2 C of chicken per sandwich.
Slather the chicken on each sandwich with 1/2 C of tomato sauce.
Topped with lots of chopped basil.
Either spray grill lightly with oil or lightly butter each side of the sandwich.
Grill until cheese melts and chicken is warmed through. (about 5 minutes)
Transfer sandwiches back to cutting board and slice each in half.
Complete each sandwhich with the second piece of bread.
