Banana Nut Stuffed French Toast
Serves 6
12 Slices Challah or Brioche, 1″ thick
6 Large Eggs
1.5 C Heavy Cream (you also also use Half & Half or Whole Milk)
2 T Vanilla
1/2 t Cinnamon
Pinch Nutmeg
Pinch Salt
6 Ripe (but firm) Bananas, sliced 1/4″ thick
1.5 C Walnuts, toasted and roughly chopped
1.5 C Brown Sugar
8 T Butter
1/4 C Vegetable Oil
Combine Bananas, sugar and walnuts in a bowl. Stir gently to combine.
Whisk together eggs, cream, vanilla, cinn, nutmeg and salt in a medium bowl.
Lay out half the slices of bread on a clean work surface. Spoon 1/2 C of the banana mixture on each slice. Top with remaining slices and press gently to seal.
Place the sandwiches in a shallow baking dish and pour egg mixture over the French Toast.
Let sit 10 minutes. Gently flip sandwiches and let sit 10 more minutes.
Heat the remaining banana mixture in a small skillet over medium-low heat until sugar is melted. Stir in 4 T butter. Remove from heat and keep warm.
Heat 2 T butter and 2 T oil in a large skillet over medium heat. Fry half of the sandwiches 2-3 minutes per side, or until golden brown.
Place fried sandwiches on a wire rack on a baking sheet in a low oven to keep warm while you fry the rest of the sandwiches.
Heat remaining butte and oil and fry remaining sandwiches.
Cut each sandwich in half and serve with warm banana sauce.
